Spiced Pulled Pork | Slimming & Weight Watchers Friendly

Ingredients

For the pulled pork

  • 1 kg pork joint any visible fat removed
  • 1 tsp Chinese 5-spice
  • 1 tsp salt
  • 750 ml boiling water
  • 2 chicken stock cubes
  • 150 ml dark soy sauce
  • ½ tsp chilli flakes
  • 1 tbsp rice vinegar
  • ½ orange zest only
  • 1 tsp Sriracha
  • 3 tbsp granulated sweetener
  • 4 spring onions cut into 5cm (2 inch) pieces
  • 1 head garlic gloves peeled and cut in half
  • 2 cm piece fresh ginger no need to peel (cut into thin slices)
  • 6 soft tortilla wraps (33g per wrap)

For the spicy sauce

  • 5 tbsp quark
  • 1 tbsp rice vinegar
  • 1 tsp Sriracha
  • 1 tsp water depending on how thin you want the sauce

For the slaw

  • ¼ red cabbage shredded
  • 3 carrots peeled and julienned
  • 1 lime juice only
  • 1 tbsp rice vinegar
  • 1 tsp Sriracha
  • 1 tsp fish sauce (optional)

Instructions

  • Preheat the oven to 160°C.

To make the pork

  • Rub the pork all over with the Chinese 5-spice and salt.
  • To the water, add the chicken stock cubes, soy sauce, chilli flakes, rice vinegar, orange zest, Sriracha and sweetener and stir until dissolved.
  • Add the spring onions, garlic and ginger. Place the pork into the casserole dish and submerge in the cooking liquid.
  • Cover with a lid and cook for 2-4 hours. Until the meat is very tender.
  • Remove the pork and shred with two forks. Pour the sauce through a fat separator and and transfer the sauce to a saucepan and set on a medium heat. Simmer until reduced by half. Pour over the shredded pork and toss to coat.

To make the spicy sauce

  • Add all the sauce ingredients to a small bowl and mix until smooth.

To make the slaw

  • Place the shredded cabbage and carrots in a bowl. Pour over the lime juice, rice vinegar, Sriracha and fish sauce and mix well.
  • Place a little of the pork mixture onto each wrap, add some slaw and a drizzle of spicy sauce. Fold in half and serve!

Slow Cooker Spiced Pulled Pork

We know how tiring it is to cook when it’s boiling hot outside! That’s why we usually leave our Slow Cooker Spiced Pulled Pork recipe to bubble away low and slow all day, until it’s mouthwateringly tender.

With the hard work done for you, all you have to worry about is deciding how to use it. Will you use the smoky-sweet pork pieces to fill tacos, burritos, wraps or salad bowls?

While it’s tasty enough to enjoy all on its own, we’ve taken things up a notch by prepping a lip-smacking sauce and a zingy side-slaw too.

Slow Cooker Chilli Bowls

It might seem like a contradiction, but we love leaning on spicy foods when the sun’s shining. These Slow Cooker Chilli Bowls are a colourful, creative way to make use of leftover portions of chilli con carne.

We’ve not skipped any of the classic accompaniments, from a rice base to a cheesy topping (you can even add a spoonful of guacamole or sour cream, if you fancy!).

You might think there isn’t much rice in our recipe, but it’s just the right amount to leave you full and satisfied – especially on a hot summer’s evening.

Three plates are set on a tiled countertop. Each plate is filled with a crisp, golden tortilla wrap that has been baked into a bowl shape. Inside the tortilla bowls are fluffy white rice and rich brown chilli con carne, sprinkled with cheese.

Chicken Cacciatore

While Chicken Cacciatore translates to Hunter’s Chicken in Italian, it’s very different from the British pub grub version (you can go here to try our twist on that recipe, which is slow cooker friendly too!).

You might think this rich, tomatoey dish is only perfect for the warmer months, but it’s actually gorgeous year-round! Try it over a bed of pasta, or – for something lighter – serve it with a fresh, crispy mixed salad and scoop up the sauce with a crusty wholemeal bread roll.

Yes, that’s right – you can make this hugely popular Pinch of Nom classic in your slow cooker. This is our quick slow cooker method for prepping One Pot Mediterranean-Style Chicken Orzo:

  • Brown the chicken, add to the pot with all of the other ingredients (except the orzo and parsley).
  • Cook on high for 2-3 hours. 
  • Add the orzo and some extra stock, if required. Cook for a further 35-40 minutes on high until the orzo is tender.

Cheeseburger Chopped Salad | Slimming & Weight Watchers Friendly

This Cheeseburger Chopped Salad takes ‘bunless burger’ to the next level! We’ve tossed in all of our favourite cheeseburger-inspired ingredients, including juicy beef mince, tangy gherkins, crispy salad and reduced-fat Cheddar cheese. Everything is brought together with a mouthwatering finishing touch: creamy, sweet and tangy homemade burger sauce!

  • Frying pan

Ingredients

For the mince

  • low-calorie cooking spray
  • 250 g 5% beef mince
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp dried oregano
  • ½ tsp garlic granules
  • ½ tsp onion powder
  • 1 tsp Henderson's relish
  • salt and pepper to taste

For the salad

  • 2 smoked bacon medallions sliced
  • ½ red onion peeled and sliced
  • 1 iceberg lettuce approx. 500g, stalk removed and sliced
  • 80 g cucumber sliced
  • 8 cherry plum tomatoes sliced
  • 60 g sliced pickled gherkins
  • 80 g sweetcorn drained
  • 2 tbsp light mayonnaise
  • 2 tsp reduced-sugar ketchup
  • 2 tbsp vinegar from gherkins
  • ¼ tsp mustard powder
  • ¼ tsp garlic granules
  • ¼ tsp white granulated sweetener
  • 20 g reduced-fat Cheddar cheese finely grated
  • salt and pepper to taste

Instructions

  • Spray a medium frying pan with low-calorie cooking spray and place over a medium heat.
  • Add the beef mince, paprika, cumin, oregano, garlic granules, onion powder and Henderson's relish. Fry for 8-10 minutes until the juices have evaporated and the beef is cooked through. Season to taste with salt and pepper.
  • While the mince is cooking, spray another frying pan, add the onion and bacon and fry for 4-6 minutes until onion is soft and bacon cooked and crispy.
  • On your serving plates or bowls, layer up the lettuce, cucumber, tomatoes, sweetcorn and gherkins. To a small bowl add the mayonnaise, ketchup, gherkin pickle vinegar, mustard powder, garlic granules and sweetener and mix until smooth. Season to taste with salt and pepper.
  • Top the lettuce with the cooked beef mince, onion and bacon. Sprinkle over the cheese and finish with a drizzle of burger sauce dressing.

There’s no better recipe to kick off this list of salt and pepper fakeaways! Our version of Salt and Pepper Chicken brings all the famous flavours to the table, without lashings of oil or hidden nasties.

We’ve used a homemade spice blend and low-calorie cooking spray to keep things lighter. Remember, you can vary the spice as much as you like – just leave out some of the chilli if you prefer a milder dish.

Nothing has us looking forward to lunchtime as much as our Salt and Pepper Chicken Salad. Think about all the takeaway flavours you know and love, tossed into a fresh and crispy Asian-style salad bowl!

We like to use fresh and crispy shredded veggies, but there’s nothing to stop you swapping in your favourite greens (or adding some rice, if you fancy) – just be sure to adjust the calories if you’re keeping track.

Salt and Pepper Chicken Nuggets

We honestly haven’t ordered Salt and Pepper Chicken Nuggets from a takeaway since we figured out how to make this healthier version! Toasting the sea salt in a dry pan is the key to achieving that authentic salt and pepper taste, so you don’t want to skip that step in the recipe.

Simply pop the breadcrumbed chicken chunks on a baking tray and your oven will turn them golden within 25-30 minutes.

We toss them together with colourful chopped green peppers, red peppers and chillies.

Salt and Pepper Chips

If you’ve always wondered how to make Salt and Pepper Chips at home (and make them healthier!), you’re in the right place. This is another one of those recipes that stopped us ordering from the Chinese takeaway as much!

A tasty break from chicken, this beautifully simple pork is one of our favourite salt and pepper fakeaways to serve over a bowl of rice and pak choi. 

Once you’ve toasted your salt flakes and combined them with the rest of the spice mix ingredients, you’ll coat the pork evenly and leave it to marinate. The longer you leave it, the tastier it’ll be – we usually leave ours overnight!

Salt and Pepper Ribs

There’s no rushing these mouthwatering Salt and Pepper Ribs, but the good news is they’re well worth the wait! Once they’re coated with a medley of store cupboard staples and diet coke (yes, really – diet coke!), you’ll leave them to oven-bake until tender and succulent.

Hours later, they’re pan-fried on a bed of vibrant veggies with dried chilli flakes and toasted sea salt before serving. One word: heavenly!

We spotted these Tesco Finest Gigantes Beans and felt like we were on holiday! The butter beans are coated in a rich and herby red wine sauce inspired by the Mediterranean.

They’d make for a delicious addition to a tapas-style dinner when you don’t feel like cooking. 

We can’t talk about small plates without mentioning this luscious Baked Feta and Tomatoes recipe. If we get lucky with the weather this weekend, mop it up with pitta or warm crusty wholemeal bread as part of a mezze-style barbecue spread.

You’ll either love or hate these controversial Marmite Potato Wedges! We spotted them at Tesco alongside a range of Marmite-flavoured side dishes, including potato gratin, mashed potatoes and roasties.

It’s no secret that we love anything made with Marmite at Pinch of Nom, so of course we had to pick them up!

We tried these crispy wedges with our Melt-in-the-Middle Bacon Cheeseburgers and they were divine! As you’d expect with Marmite, there’s no need to add salt – they’re already flavourful enough.
