It’s impossible to get bored of chilli con carne, especially when there are so many different ways to serve it. This tasty M&S Hot Chilli Con Carne Cooking Paste is handy for busier evenings where you want the spice mix to be ready and made for you.

Simply stir together with your choice of protein – we tend to go for reduced-fat beef mince.

The truth is, our Slow Cooker Chilli Con Carne is the most convenient recipe to follow for chilli night. Pop everything in the pot and leave your trusty kitchen gadget to do its thing!

If you’re a fan of the classic flavours in Spaghetti Bolognese, prepare to fall in love with these M&S Bolognese Bites. These Italian-inspired balls are filled with a cooked pasta, juicy beef and smoked bacon ragu, stirred through with gooey mozzarella cheese and herbs – and yes, all of that is wrapped in breadcrumbs!

We’re always in the market for satisfying savoury snacks, and Jacob’s brand-new Cheddar and Red Onion Baked Mini Cheddars definitely tick that box. While you’d expect Mini Cheddars to be packed with the cheesiness, punchy red onion takes these baked biscuits up a notch.

Bold statement – we might even prefer these to the original! You can also pick up Cream Cheese Garlic and Herb flavoured multipacks.

It’s well worth baking up our Air Fryer Cheese and Onion Bakes recipe next time you fancy a cheesy snack. For our gooey centre, we’ve filled our ‘pastry’ (sandwich thins) with a heavenly combo of reduced-fat Cheddar and onion.

These Morrisons Mexican-Style Chicken Mini Fillets are a quick, fuss-free fiesta for dinnertime. After you’ve baked them for 15 minutes in the oven, you’ll take them out briefly to top with the provided sachet of fajita-flavoured sauce. 

We’ve got no choice but to serve them with a golden, fluffy portion of our Nando’s Spicy Rice. It’s really easy for us because we’ve always got leftovers on standby, ready to reheat in a flash.

You could be fooled into thinking this Bramwells Peri-peri Sauce and Marinade is from a famous Portuguese restaurant. We went for ‘medium-spice’, but there’s nothing to stop you grabbing ‘garlic’, ‘lemon and herb’ or even the hottest one while you’re in Aldi.

Add a punchy flavour boost to peri-peri wraps, salads or pasta bowls with a quick drizzle.

If you follow us on Instagram, you’ll know we’ve been celebrating how delicious orzo is all week. This Piri Piri Chicken Orzo is beautifully simple and full of flavour for an indulgent family pasta night. You can also cook it once and enjoy it twice, since it’s freezable too.

1. Iceland Mini Corn Cobs – 80 calories per 100g serving

You can’t have a Mexican-inspired fakeaway feast without corn on the cob! You can pick up a bumper bag of bright yellow Mini Corn Cobs from Iceland for just two quid at the mo – and they’re cracking to have stashed in the freezer.

There are lots of different ways to get them prepped, from steaming to oven-baking. We like to pop them in our air fryer until they’re golden and crunchy.

We use full-sized cobs for our Mexican Corn on the Cob side dish, but there’s nothing to stop you making the most of these adorable minis instead.

You can’t go wrong with our slimming-friendly homemade rub made from fat-free yoghurt, tangy feta, fiery chilli powder and a hint of salt.

Garnish with paprika, coriander and a squeeze of lime to unlock even more flavour.

A Mexican feast just isn’t the same without jalapenos. This easy-drizzle Gran Luchito Creamy Jalapeno Sauce adds instant magic to countless meals, from lunchtime salads and wraps to oven-baked burritos, tacos or burgers.

While our hearty Beef and Bean Burrito Bake already has sliced jalapenos on top, there’s nothing to stop you stirring a drop or two inside of each burrito if you fancy taking things up a spice level.

We’ve used thin, spring onion omelettes instead of tortilla wraps for this recipe; it doesn’t just keep the calories lower, it makes every serving gluten-free too.

3. Heinz Beanz Chilli – 164 calories per 1/2 can

We’ll hold our hands up! These tins of Heinz Beanz in Chilli flavour have been around for a little while, but this is the first time they’ve been part of a range of Mexican-inspired goodies in Aldi’s Specialbuy aisle.

They’ve all arrived just in time to celebrate National Margarita Day on the 22nd of February – cheers to that!

With our Baked Bean Chilli recipe, it’s easier than you might think to rustle up a flavour-filled family dinner without breaking the bank. 

Aside from chilli-infused mince and fresh veggies, a tin of baked beans (Heinz Beans Chilli, or normal!) is a must-have ingredient for this humble crowd-pleaser.

4. M&S Collection Purple Flesh Sweet Potatoes – 98 calories per 100g

As soon as we heard the buzz around M&S stocking these Purple Flesh Sweet Potatoes, we knew we had to hunt them down. These unique-looking spuds are actually some of the healthiest you can buy, since they’re loaded with healthy antioxidants.

Bear in mind they have a drier, starchier texture than their orange counterparts, so they’ll need a longer cooking time.

As soon as we spotted them, we saw a chance to put a funky-looking twist on our Sweet Potato and Coconut Tacos. These lovely little wraps have a rich and creamy filling that’s low in calories, without compromising on flavour.

We like to serve them with some pickled onions on top for a lip-smacking finish.

Does anyone go to Aldi and stick firmly to their list? Our head is always turned by something unexpected, like these Fiesta Special Wholegrain Spicy Rice packs. They’re newly stocked in the Specialbuy aisle, which means you’ll want to grab them while you can.

A ready-mixed blend of wholegrain rice, sweetcorn, beans and finely-chopped jalapenos, all you need to do is pop them in the microwave and wait for the beep.

They’re great to have on standby for speedy midweek dinners, or they’ll make a filling addition to your lunchbox. 

The bursts of spice from jalapeno would pair amazingly well with our slimming-friendly Chicken Burritos for an easy fakeaway tea.

We’ve bundled them up with spiced chicken, black beans and Basmati rice, tangy cheese and (most importantly) plenty of punchy guacamole.

Chicken Fajita Lasagne | Slimming & Weight Watchers Friendly

Give classic lasagne a delicious fajita-inspired twist! Combining the best of two comforting favourites, this recipe uses a homemade Mexican-style spice blend to give the all-important sauce its rich, fakeaway flavours. Layer up with mildly spiced chicken chunks, vibrant veggies, a creamy tomato-cheese sauce, and a tangy topping of reduced-fat Cheddar. Then, let your oven do the hard work until you're rewarded with a golden, bubbling crowd-pleaser!

Equipment

  • 28 x 24cm ovenproof dish

Ingredients

For the Mexican-style spice mix

  • 2 tbsp smoked sweet paprika
  • 1 tbsp garlic granules
  • 1 tbsp chilli powder mild or hot, depending on your taste
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp onion granules
  • ¼ tsp salt

For the lasagne

  • 400 g chicken breast cut into small dice
  • 2 tsp Mexican-style spice mix
  • low-calorie cooking spray
  • 1 red onion peeled and sliced
  • 2 mixed peppers deseeded and sliced
  • 4 garlic cloves peeled and crushed
  • 1 tbsp Mexican-style spice blend
  • 400 g chopped tomatoes
  • 500 ml chicken stock (1 chicken stock cube made up with 500ml boiling water)
  • 165 g reduced-fat cream cheese
  • juice of half a lime
  • 125 g frozen sweetcorn
  • handful of coriander leaves roughly chopped
  • 6 lasagne sheets
  • 80 g reduced-fat Cheddar finely grated

Instructions

  • Mix all the spices together in a small bowl and use 2 tsp to coat the chicken. Cover and allow to marinate for 10 minutes while you prepare the sauce.
  • Place a large saucepan over a medium heat, add the garlic, tomatoes, stock and 1 tbsp of the Mexican-style spice mix (you can save any remaining spice mix in a jar to use again). Bring to a boil, then reduce the heat and simmer for 15 minutes.
  • While the sauce simmers, spray a frying pan with low-calorie cooking spray and place over a medium heat. Add the chicken and cook for 2-3 minutes until sealed on all sides. Add the peppers and onions and cook for a further 5 minutes. Remove from the heat.
  • Whisk the cream cheese into the spicy tomato sauce until melted, and squeeze in the lime juice. The sauce should be the consistency of single cream. If it seems a little watery, increase the heat and simmer rapidly for a few minutes until thickened.
  • Remove 200ml of sauce and put aside for the topping. Preheat the oven to 180°C fan.
  • Stir the sauce into the chicken, peppers and onions, add the sweetcorn and coriander. Pour half the fajita mix into the bottom of the ovenproof dish. Lay 3 lasagne sheets on top and add the rest of the fajita mix and then the remaining lasagne sheets. Pour the reserved sauce over the top and sprinkle on the grated cheese.
  • Place on a baking tray and into the oven for 40-50 minutes until the cheese is golden and bubbling and the pasta feels tender when you insert a knife.
  • Allow to rest for 5 minutes before serving.

Tip: The remaining spice mix will keep in a jar for several weeks and can be used as a rub or seasoning for meat or fish. You can also use it in our recipe for Mexican-style Salad.

Vivera Plant-Based Chicken Pieces are a tasty way to take a break from meat. This plant-based recipe recreates the taste and texture of chicken really well, meaning you’ll have no trouble trialling them in your usual sandwiches, salads or pasta dishes.

You can pop them in the oven or pan-fry them, but we think they taste closest to the real thing when they’re air-fried.

There’s nothing to stop you using a portion to give our Chicken and Bacon Caesar Salad a vegetarian makeover. Our version of the lunchtime classic is far from boring, with just as much garlicky goodness as traditional versions.

The only difference is, our answer to Caesar dressing is made with a slimming-friendly combination of fat-free Greek yoghurt, light mayonnaise and lemon juice.

It’s always a good idea to have light, savoury snacks like M&S Sour Cream and Chive Houmous Chips handy for when you’re feeling peckish. Rather than being deep-fried like traditional potato snacks, houmous chips get their crunchy goodness from baked chickpeas and lentils.

While some reduced-fat snacks can cut the calories and lose taste, we’re happy to report that these grab bags are absolutely jam-packed with punchy flavour!

No matter how you spell it, there’s no denying that Hummus paired with lots of vegetable batons makes for a gorgeous, healthy snack. There’s no doubt that these Sainsbury’s Taste the Difference Cheddar and Pesto Twists will have you coming back for more. As if flaky, buttery puff pastry wasn’t delicious enough, it’s also flavoured with tangy notes of Cheddar and fresh basil.

Enjoy them as they are, or take them for a dip in your choice of sauce – we’d go for some chutney, or better yet, more pesto!

If you’re looking to host a get-together with a spread of savoury nibbles, our Pizza Twists with Pizza Dip should be invited. They’re easy-peasy to rustle up with a short list of budget-friendly ingredients, and pizza lovers won’t be able to get enough.

We’ve gone for a classic, margherita-style combination of cheese and tomato, but there’s nothing to stop you getting creative with different pizza-inspired flavour combinations.

We love Aldi’s fortnightly selection of fresh fruit and veggies! They choose different items for a special offer where you can pick them up for much less than the normal price. 

Here’s the rundown of this week’s Super 6 offering, along with some recipe ideas for you.

We’ll always pick up celery if it’s part of the Super 6 deal! It makes for a tasty addition to base sauces, stews and soups – alongside onions and carrots. It’s also great to nibble on dunked into a budget-friendly homemade dip.

It’s also great for bulking out recipes like our Creamy Tomato Pasta, as well as adding a nutritious flavour boost.

We’ve seen a few interesting flavours of popcorn popping up recently, and this new Strawberries and Cream Flavour Popcorn from Tesco caught our eye this week. Based on the classic British summertime snack of juicy, fresh strawberries served with cream, it’s the perfect flavour to crunch in the sunshine!

The special ‘butterfly’ popcorn has a more open shape than traditional kernels, which is better for catching the sweet seasoning. That’s more irresistible flavour in every bite! 

It’s hard to beat light, crispy popcorn when you’re snacking in front of a film, but we’ve got plenty of ideas for slimming-friendly alternatives in this handy roundup. It’s no surprise that you’ll find our Cheesecake Stuffed Strawberries on the list – they’re dreamy little bites with a delicious crushed biscuit topping.

Microwavable rice is always handy to have in the cupboard when you need a side dish in a hurry! This Veetee Japanese Togarashi Spicy Sticky Rice comes packed with fiery flavour, for just 80 calories per serving. 

Pop it in the microwave for 2 minutes, or stir-fry it with your choice of meat and veggies. With a tastebud-tingling combination of fruity citrus, nutty sesame, fragrant ginger and hot chillies, it’ll spice up dinner times!

During the summer months we love to fill our midweek menu with salads and lighter meals. These home-grown Albert Bartlett Supreme Salad Potatoes are the ideal accompaniment to your seasonal meal plan.

We’ve popped these Exceptional by ASDA Pork Sausage Rolls at the top of our shopping list, since we can’t resist the sound of succulent pork, wrapped up in flaky all-butter puff pastry. 

Suitable for air-frying or baking in the oven, you’ll know they’re ready when they’re piping hot and your kitchen smells like a bakery!

There’s no real pastry and no real meat in our Vegan Sausage Roll recipe, but that doesn’t mean they don’t look and taste the part. A lovely lower-calorie alternative that everyone can enjoy, they’re made from veggie sausages and tortilla wraps – so they work out at only 74 calories each!

We’ve made it our mission to prove that salads never have to be boring (just check out our top salad recipes article if you don’t believe us!). That’s just one reason we were excited to spot this Fling Thai-Inspired Salad Kit on the shelves at Asda this week. 

The colourful medley of pink cabbage, carrot, spinach, apollo lettuce, spring onion and radish comes with bags of flavour – the pack includes sachets of citrus mayonnaise, a sriracha dressing and rice crackers for a little crunch. Add your choice of protein and that’s lunch sorted!

When we have leftover cooked chicken in the fridge, you can be sure our Chopped Thai-Style Chicken Salad is going on the menu. Fresh and fragrant, it’s a riot of flavours, including everything from juicy pineapple and spicy red chillies, to a creamy, rich peanut sauce.

You’ve probably come across Patak’s spice pastes and sauces before, and now they’ve added a few speedy meals to the supermarkets. This Patak’s Meals In Minutes Potato and Cauliflower Curry caught our eye, since it’s only 221 calories for the whole pack – and it microwaves in just 90 seconds! 

Medium-spicy, it’s perfect for a busy day in the middle of the week, especially if you add a portion of microwavable rice on the side. 

When you have an hour to cook from scratch, our veggie-friendly Cauliflower Madras is a fakeaway favourite that we always recommend. It’s easy to tone down the spice level if you like things on the milder side, but if you like it fiery, don’t be shy with the fresh chillies!

If rustling up a batch of fajitas in the middle of the day sounds like too much effort, pop a tub of this Fajita Chicken from Asda in your basket this week. The ready-to-eat mixture includes cooked chicken breast, mixed beans, roasted red peppers, Cheddar, onions and jalapeños in a smoky and spicy sauce. 

Bang it straight into a tortilla wrap for a super-easy lunch, or turn it into a flavourful sandwich filling with a kick. 

We love using leftover fajita mix to make our Chicken Fajita Pasta. It’s a quick, filling dinner recipe that the whole family can get stuck into – and it’s budget friendly too (in fact, you’ll find it on pages 40-41 of Pinch of Nom: Budget).

Whether it’s a film night or a garden party, a bowl of crunchy popcorn won’t last long with a crowd around – especially when it’s an ice cream inspired flavour that you can munch by the handful!

We can’t talk about raspberry ripple without mentioning our Raspberry Ripple Arctic Roll. A low-calorie take on a retro favourite, we’ve made our own tangy raspberry puree to swirl through shop-bought vanilla ice cream. Trust us, it makes it extra-fruity and delicious!
