I used honey instead of maple syrup and struggled a bit with the topping but added a bit of water and it worked out ok. I also ran out of granulated sweetner so subbed some of it for brown sugar. Lovely!

I was sceptical what these would taste like but they blew me away. You cannot taste the sweet potato and you are just left with delicious fudgy brownies. The recipe was easy to follow and would be a great way to make healthier brownies with the kids.
