Hey Elaine, if you scroll down to the recipe card at the bottom of the page there are a set of arrows next to serving size where you can alter the servings up or down. Rather than trying to scale it down to 1 serving you could try halving the servings for the recipe so in this case the original recipe serves 6 so scale it down to 3 and freeze the extra portions that way you will have a set of homemade ready meals ready to go and less cooking to do! Hope that helps.
