Hi Amy, sorry to hear you found our Mexican potatoes too hard and spicy. The potatoes need to be cut into even 2 cm cubes to cook in the time stated in the recipe.You don’t need to add water when you microwave them. After microwaving, cook them in the oven for around a further 17 minutes or until soft inside and crisp and golden on the outside.This is a spicy dish, but you can reduce the amount of chilli powder to suit your own taste. Had to adjust the temperature slightly so just left them in longer to crisp up nicely! So much better than a standard ‘chip or fries’ full of flavour!
