Hey Steph, cooking apples are best for pies and crumbles as they are tart and have a firmer flesh that doesn’t break down as much when cooked. Eating apples are a lot sweeter so if you use those instead you may find you need to add less sugar or sweetener to the pie. Hope that helps!
