Air Fryer Pork Parmigiana | Slimming & Weight Watchers Friendly

There’s no resisting the gooey layer of mozzarella cheese on top of our Air Fryer Pork Parmigiana recipe! While you can bake them in the oven if you want to, we love that you can have the Parmesan and lemon crust coating crisped to perfection even faster with the help of your air fryer. The prep is done in a flash, and then there’s no rushing the Italian-style sauce. Let it bubble away in a saucepan for at least half an hour while all those gorgeous flavours mingle!

Ingredients

  • 500 g passata
  • 1 tsp garlic granules
  • 1 tsp onion granules
  • 1 tsp dried oregano
  • ½-1 tsp granulated sweetener (or sugar)
  • salt and freshly ground black pepper
  • 4 100g pork loin steaks trimmed of fat
  • zest of 1 lemon finely grated
  • 1 tsp dried parsley
  • 15 g Parmesan cheese finely grated
  • 30 g panko breadcrumbs
  • 1 tbsp cornflour
  • 1 medium egg beaten
  • 125 g reduced-fat mozzarella sliced
  • low-calorie cooking spray

Instructions

  • Place the passata, garlic granules, onion granules, and oregano into a saucepan. Bring to the boil, then reduce the heat and simmer for 30 minutes, while you prepare the pork steaks. Stir occasionally to make sure it doesn't catch.
  • Using a rolling pin or a meat mallet, lightly bash the pork steaks, to a ½cm thick escalope.
  • Mix the lemon zest, parsley, Parmesan, and panko together on a plate, and beat the egg on another plate.
  • Dust the pork with the cornflour, then dip into the egg, then into the panko mix, to coat lightly.
  • Spray the air fryer basket with low-calorie cooking spray, place the pork directly onto the basket, spray the tops of the pork with low-calorie cooking spray and cook 200°C for 12 minutes, or until the pork is cooked and the breadcrumbs are crisp.
  • Taste the sauce and add sweetener and salt and pepper, if required.
  • Spoon the sauce on top of the pork, then top with the sliced mozzarella. Continue cooking for 3-4 minutes, or until the mozzarella is melted and bubbling. Serve!

Scotch eggs…but not as you know them! We’ve given the timeless snack a crunchy, spicy makeover by covering them in our popular ‘Zinger’ coating. We’re using reduced-fat pork sausages for this recipe, but you could easily swap these for your favourite low-calorie chicken or beef sausages.

Ingredients

  • 4 medium eggs, at room temperature
  • 8 reduced-fat pork sausages
  • 2 tsp cornflour
  • 1 medium egg, beaten

For the Zinger coating

  • 80 g Doritos Chilli Heatwave flavour tortilla chips
  • 2 tsp mild chilli powder
  • 2 tsp garlic granules
  • 2 tsp paprika
  • 2 tsp onion granules
  • low-calorie cooking spray

Instructions

  • Place a medium saucepan half- filled with cold water on a high heat and bring to the boil. Lower the room temperature eggs into the boiling water using a large spoon. Reduce the heat so that the water is simmering. Simmer for 8-10 minutes for hard boiled eggs.
  • When the eggs are cooked, remove them from the saucepan using a slotted spoon and plunge them into a medium bowl filled with cold water. Change the cold water several times until the eggs are completely cold. This will stop the eggs cooking any further and prevent discolouration.
  • When the eggs are completely cold, discard the water and carefully peel off the shells, making sure there are no bits of shell left on the eggs. Set aside and allow to dry while you make the Zinger coating mixture.
  • Place the Doritos, chilli powder, garlic granules, paprika and onion granules in a strong food bag. Squeeze out the air and seal the bag, then bash with a rolling pin or similar heavy object until the mixture resembles coarse breadcrumbs. Pour the mixture onto a plate and set aside.
  • Squeeze the sausage meat out of the sausage skins into a medium mixing bowl. Form into a ball and divide into four equal portions.
  • Dust the dry hard-boiled eggs all over with cornflour. Take a portion of sausage meat and mould it around an egg to completely encase the egg. Repeat until all four eggs are encased in sausage meat.
  • Dip the sausage-wrapped eggs in the beaten egg to thoroughly coat all over. Then dip the eggs into the Zinger coating mixture until thoroughly coated all over.
  • Preheat the air fryer for 2-3 minutes at 180°C. Spray the inside of the air fryer basket with low-calorie cooking spray. Place the Zinger Scotch Eggs in the air fryer basket and spray the tops with low-calorie cooking spray. Air-fry for 20 minutes, turning over halfway through and spraying with low-calorie cooking spray again. The Zinger Scotch Eggs will be ready when the sausage meat is cooked through and shows no sign of pinkness, and the coating is crisp and golden.
  • Remove the eggs from the air fryer using a large metal spoon. Cut each egg in half using a large, serrated knife (such as a bread knife) and serve warm or cold.

Tip: 1 portion is half a scotch egg.
Tip: Use eggs at room temperature for the timings given in this recipe. If you use cold eggs straight from the fridge they will take longer to cook, and the shells may crack when you place them in the saucepan of boiling water. Timings will also depend on the size and freshness of the eggs you use.
Tip: It will make it easier to coat the sausage-wrapped eggs if you coat them one at a time. If you leave them sitting in the beaten egg, they may become too soft, wet and difficult to handle.
