Chilli and Cheese Burgers | Slimming & Weight Watchers Friendly

You don’t need fancy ingredients or hours in the kitchen to get burgers that are proper tasty. These sizzling Chilli and Cheese Burgers are made from lean beef, diced onion and jalapenos, then seasoned with warming spices and packed with melty reduced-fat Cheddar for a gooey surprise inside.

  • 1 large non-stick frying pan

Ingredients

  • 250 g 5% fat lean minced beef
  • 1/2 a small red onion peeled and finely diced
  • 1 tsp mild chilli powder
  • 1 tsp garlic granules
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • 50 g reduced fat Cheddar cheese coarsely grated
  • 25 g jalapenos drained and chopped
  • salt and freshly ground black pepper
  • low-calorie cooking spray

To serve

  • 4 reduced fat burger cheese slices
  • 2 tomatoes sliced
  • 1/2 small red onion peeled and sliced
  • handful of iceberg leaves shredded
  • 4 60g wholemeal rolls

Instructions

  • Place all the burger ingredients apart from the spray in a mixing bowl and using your hands, mix, pressing and squeezing together to ensure thorough mixing.
  • Press firmly into 4 equally sized burger shapes, about 1cm thick.
  • Spray a large, non-stick frying pan with low calorie cooking spray and place over a medium to high heat. When the pan is hot, add the burgers and cook for 2-3 minutes before carefully flipping and cooking for a further 2-3 minutes.
  • Fill the rolls with the tomatoes, onions and lettuce and place a burger on top. Top with a cheese slice and enjoy!

Ramp up the heat levels by using hot chilli powder and topping with extra jalapenos.

Ingredients

For the mince

  • low-calorie cooking spray
  • 250 g 5% beef mince
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp dried oregano
  • ½ tsp garlic granules
  • ½ tsp onion powder
  • 1 tsp Henderson's relish
  • salt and pepper to taste

For the salad

  • 2 smoked bacon medallions sliced
  • ½ red onion peeled and sliced
  • 1 iceberg lettuce approx. 500g, stalk removed and sliced
  • 80 g cucumber sliced
  • 8 cherry plum tomatoes sliced
  • 60 g sliced pickled gherkins
  • 80 g sweetcorn drained
  • 2 tbsp light mayonnaise
  • 2 tsp reduced-sugar ketchup
  • 2 tbsp vinegar from gherkins
  • ¼ tsp mustard powder
  • ¼ tsp garlic granules
  • ¼ tsp white granulated sweetener
  • 20 g reduced-fat Cheddar cheese finely grated
  • salt and pepper to taste

Instructions

  • Spray a medium frying pan with low-calorie cooking spray and place over a medium heat.
  • Add the beef mince, paprika, cumin, oregano, garlic granules, onion powder and Henderson's relish. Fry for 8-10 minutes until the juices have evaporated and the beef is cooked through. Season to taste with salt and pepper.
  • While the mince is cooking, spray another frying pan, add the onion and bacon and fry for 4-6 minutes until onion is soft and bacon cooked and crispy.
  • On your serving plates or bowls, layer up the lettuce, cucumber, tomatoes, sweetcorn and gherkins. To a small bowl add the mayonnaise, ketchup, gherkin pickle vinegar, mustard powder, garlic granules and sweetener and mix until smooth. Season to taste with salt and pepper.
  • Top the lettuce with the cooked beef mince, onion and bacon. Sprinkle over the cheese and finish with a drizzle of burger sauce dressing.

Calling all garlic lovers! This wholesome pie is for you. To double up on garlicky goodness, we’ve added mashed oven-roasted garlic bulbs to the fluffy potato topping AND the slimming-friendly filling. Packed with reduced-fat beef mince, earthy mushrooms and thyme (plus plenty of chopped veggies!), this one is satisfying enough to serve all on its own – we won’t say no to a side of garden peas though!

  • Ovenproof dish

Ingredients

  • 2 garlic bulbs
  • 350 g mushrooms sliced
  • 1 onion peeled and diced
  • 1 leek trimmed and finely sliced
  • 500 g 5% fat mince beef
  • 1 tsp dried thyme
  • 2 tbsp tomato purée
  • 2 tbsp Henderson's relish (or Worcestershire sauce)
  • 600 ml beef stock (1 beef stock cube made up with 600ml boiling water)
  • 1 tbsp cornflour mixed to a slurry with 1 tbsp water
  • 750 g potatoes peeled and cut into chunks
  • 75 g reduced-fat cream cheese
  • salt and freshly ground black pepper
  • low-calorie cooking spray

Instructions

  • Firstly, roast your garlic bulbs. Heat the oven to 180°C fan. Take the whole bulbs of garlic and slice about 1/2cm off the top of each. Spray with low-calorie cooking spray and wrap in a piece of tin foil. Place in the oven for 30-40 minutes.
  • Cook the potatoes in a pan of salted water for around 20 minutes, or until a knife slides easily into the centre.
  • While the potatoes cook, prepare the filling. Spray a large non-stick frying pan with low-calorie cooking spray, place over a medium to high heat and add the mushrooms. Cook for 6-7 minutes until browned. Remove from the pan and set to one side.
  • Spray the pan again with low-calorie cooking spray and add the leek and onions. Cook for 5 minutes until they begin to soften. Add the mince and cook for another 5 minutes.
  • Stir in the thyme and tomato purée. Add the Henderson’s relish and stock and bring to a boil. Return the mushrooms to the pan, then reduce the heat and simmer for 10 minutes.
  • While the mince cooks, unwrap your roasted garlic and squeeze the cloves out of their skin, into a bowl. Mash with a fork.
  • Drain the potatoes and mash with the cream cheese and half the roasted garlic. Season with salt and pepper to taste.
  • Stir the remaining garlic into the mince then add the cornflour slurry and stir until thickened. Season with salt and pepper, if needed.
  • Pour the mince into the ovenproof dish and top with the garlic mash.
  • Place on a baking tray and then place in the oven for 25-30 minutes until the potatoes are golden brown. Serve!

Tip: Plan ahead and save energy by popping the garlic in to roast whenever you have the oven on. It keeps in the fridge for up to 3 days, stored in an airtight container.

  • few sprigs of fresh thyme
  • few sprigs of fresh rosemary
  • salt and pepper, to taste

Instructions

  • Preheat the oven to 170°C.
  • Season the beef with salt and pepper. Spray a frying pan with low-calorie cooking spray and set on a medium heat. Add the beef and fry for 6-8 minutes until browned on all sides.
  • Add the beef to a casserole dish along with the onion, carrot, celery and garlic.
  • To the boiling water add the stock pot, tomato puree, cornflour, cranberry sauce, Henderson's relish and sweetener. Stir to combine and pour into the dish along with the chopped tomatoes and stir.
  • Press the cloves into the surface of the orange and add to the casserole pan, nestling between the beef and veg. Add the cinnamon stick, star anise, thyme and rosemary.
  • Cover with a lid and cook in the oven for 2-2.5 hours stirring occasionally until the beef is tender, vegetables cooked and sauce reduced. Remove the orange, cinnamon and star anise and discard. Season to taste with salt and pepper and serve with mashed potatoes or your choice of accompaniment.
