Equipment

  • 24cm flan dish

Ingredients

  • low-calorie cooking spray
  • 1 medium leek finely sliced
  • 3 smoked bacon medallions
  • 2 garlic cloves peeled and crushed
  • 6 medium eggs
  • 200 ml light double cream alternative
  • 100 g quark
  • ½ tsp Dijon mustard
  • ½ tsp garlic granules
  • 100 g reduced-fat Cheddar cheese finely grated
  • 15 g Parmesan cheese finely grated
  • salt and pepper to taste

Instructions

  • Spray a frying pan with low-calorie cooking spray and set on a low-medium heat. Cook the bacon, leeks and garlic for 4-5 minutes until the leeks are softening and bacon browned. Slice the bacon and leave to one side with the leeks to cool.
  • Preheat the oven to 170°C.
  • Break the eggs into a large bowl and whisk. Add the double cream alternative, quark, Dijon mustard and garlic granules. Continue to whisk until fully combined. Season well with salt and pepper.
  • Stir through the cheddar cheese, bacon and leeks. Pour the egg mixture into a 24cm flan dish. Sprinkle over the Parmesan cheese.
  • Place the dish onto a baking tray and pop into the oven for 25-30 minutes, until the quiche is golden brown. The quiche should be set around the edge with a very slight wobble in the centre. The heat from the quiche will finish cooking the centre, so that it has a light creamy quiche texture when slicing.

Notes

Tip: You can swap the bacon for sliced ham instead, if you prefer.

Equipment

  • Baking sheet
  • Baking parchment
  • Pastry Brush

Ingredients

  • 320 g ready-rolled light puff pastry
  • 2 tbsp cranberry sauce
  • 4 cooked bacon medallions finely chopped
  • 100 g brie rind removed
  • 2 tbsp skimmed milk

Instructions

  • Preheat your oven to 200°C fan. Line a baking sheet with baking parchment.
  • Unroll your pastry sheet and lay in front of you with the longest side facing you. You can leave it on the greaseproof paper packaging to aid rolling.
  • Spread the cranberry sauce over the pastry sheet, up to the edges, leaving a 1cm gap along the longer top edge.
  • Sprinkle the bacon pieces evenly over the cranberry sauce, and then tear the brie into small chunks and dot over the bacon.
  • Use the pastry brush to moisten the 1cm gap with milk. Taking the closest, long edge to you, begin to roll up. Keep rolling until you have a ‘Swiss roll’ shape. With the seam-side down, cut into 16 equal shaped, spiral slices.
  • Arrange the slices onto the lined baking sheet, leave a small gap between each to allow them to puff up.
  • Brush the tops with a little milk then place in the middle of the oven for 15-20 minutes, until risen, crisp and golden brown. Serve.

Equipment

  • cocktail sticks or skewers

Ingredients

  • 4 reduced-fat pork sausages approx. 228g
  • fresh sage finely chopped
  • 8 g dried cranberries finely chopped
  • ½ tsp garlic granules
  • ½ tsp onion granules
  • ¼ tsp dried thyme
  • 6 chicken thighs, skinless and boneless approx. 600g
  • 6 bacon medallions
  • 2 tbsp cranberry sauce

Instructions

  • Preheat the oven to 180°C and line a baking tray with non-stick baking parchment.
  • Squeeze the sausage meat into a mixing bowl, discarding the casings. Add the sage, cranberries, garlic granules, onion granules and thyme. Mix together (we find it's easier to use your hands so that you can get everything evenly mixed).
  • Lay the chicken thighs out flat and spread with an even layer of the sausage mixture. Roll up each chicken thigh tightly, and then secure with a cocktail stick or skewer to seal in the filling.
  • Place each rolled chicken thigh onto the lined baking tray and, using half the cranberry sauce, brush the top of each. Lay a bacon medallion on top of each chicken thigh.
  • Place into the oven for 30 minutes. Remove from the oven and brush the remaining cranberry sauce on top of each slice of bacon. Return to the oven for a further 5-10 minutes, until the chicken and sausage are cooked through and the outside is turning golden brown. Remove the cocktail stick before serving.

In the middle of the week you need something easy and tasty, that’s on the table in less than an hour. This Creamy Tomato, Bacon and Spinach Pasta ticks every box, filling your plate with homely, hearty flavours. To keep the calories down, we’ve melted reduced-fat cream cheese into the rich, tomatoey sauce, making it velvety without the need for heavy cream. The hint of chilli powder gives this dish a lovely warming taste, but feel free to add more to ramp up the spiciness.

Hints & Tips

Below we added some of our communities most common hints and tips. We hope you find them useful.

Make sure to use white granulated sweetener that has a similar weight, texture and sweetness as sugar, not the powdered type.

We used penne, but use a pasta shape of your choice.

NEW TIP
Creamy Tomato, Bacon and Spinach Pasta
Freeze any left over spinach in 80g bags to use next time.
Adjust stock amount to suit, 500ml of stock gives a good sauce without being too much

Cannellini beans are the star of the show in this herby, garlicky soup. The store-cupboard staple makes the mixture delightfully smooth and silky, and we’ve ramped up the indulgence even further with a generous dollop of half-fat crème fraîche. You only need a few ingredients and a spare 10 minutes to do the easy prep work. Before you know it, you’ll be cooking up enough batches to nourish you for a few days (or longer, if you’re freezing them!).

Hints & Tips

Below we added some of our communities most common hints and tips. We hope you find them useful.

To keep your soup white, avoid using the darker green leaves from the leek.

NEW TIP
Use chunky cooking bacon
I used some chunky cooking bacon and trimmed all the fat off. This cuts the cost a lot especially if you are also using the bacon in an evening meal recipe.

We love hearing from you, submit any tips or tricks you have for this dish and we’ll review them and add some of them here. Just click here.

Hints & Tips

Below we added some of our communities most common hints and tips. We hope you find them useful.

We find the bacon makes this dish salty enough, so we don’t season with salt, only freshly ground black pepper.

NEW TIP
Great comfort dish! Would recommend cooking the squash for longer than suggested to get it nice and soft. I added a handful of peas for a splash of green. Save any parsley wastage, use what’s needed and chop and freeze the rest for another dish!
