Pimm's Scones | Slimming & Weight Watchers Friendly

You know it's summer when the Pimm's is pouring! These vibrant Pimm's Scones put a gorgeous, boozy-sweet twist on an afternoon tea classic. Once they're fluffed up and golden, you'll fill them with chopped strawberries, orange, mint and velvety cream. We like to prep the scones ahead of time, so they're ready to defrost, decorate and serve as soon as the sun shines!

Ingredients

  • 200 g strawberries sliced
  • 1 medium orange peeled and cut into segments
  • a few mint leaves finely sliced
  • 1 tsp white granulated sweetener
  • 2 tbsp Pimm's

For the scones

  • 250 g self-raising flour plus extra for dusting
  • 2 tsp baking powder
  • 25 g reduced-fat spread
  • 15 g white granulated sweetener
  • 15 g caster sugar
  • 1 medium egg beaten
  • 120 ml skimmed milk
  • 2 tbsp milk for brushing
  • 100 g fat-free thick Greek strained yoghurt
  • 1 tsp icing sugar

Instructions

  • Add the strawberries, orange and mint to a small bowl. Sprinkle over the sweetener and Pimm’s and stir. Cover and refrigerate until you are ready to serve the scones.
  • Preheat the oven to 200°C and line a baking tray with non-stick baking paper.
  • Add the flour and baking powder into a medium mixing bowl. Add the reduced-fat spread and rub in with your fingertips until the mixture resembles fine breadcrumbs. Stir the sweetener and sugar into the mixture until well combined.
  • Place the beaten egg in a jug and add the milk. Mix with a fork until completely combined.
  • Add the egg and milk mixture to the flour mixture and mix in using a round-bladed knife to form a very soft dough.
  • Scrape the dough out onto a well-floured surface and knead for a few seconds to make a smooth soft ball of dough. Don't knead too much as this may toughen the dough. The dough will be very soft so you will need to flour your hands and may need to add more flour to the surface.
  • Gently roll the dough out on a well-floured surface to a thickness of 1cm. Use a 5cm plain round cutter to cut out 16 scones.
  • Place the scones onto the lined tray. Brush the tops with milk and cook for 10-15 minutes until risen and golden brown.
  • Remove from the oven and leave to cool on a cooling rack.
  • While the scones are cooling, make the creamy topping. Place the yoghurt and icing sugar in a small bowl and mix well.
  • When ready to serve: cut the cooled scones in half using a serrated knife. Spoon a small amount of sweetened yoghurt on top of one half of the scones. Spoon over the fruit and top with the other half of the scone.

Notes

Tip: If you haven't got a suitable cutter, you can use a small, upturned glass instead. Flouring the rim of your cutter or glass will make it easier to cut out the scones. You will need to gather up and re-roll the scraps to make 16 scones.
Tip: Only assemble when ready to serve to stop the scones going wet and mushy.

Ingredients

  • 320 g ready-rolled light puff pastry
  • 2 tbsp cranberry sauce
  • 4 cooked bacon medallions finely chopped
  • 100 g brie rind removed
  • 2 tbsp skimmed milk

Instructions

  • Preheat your oven to 200°C fan. Line a baking sheet with baking parchment.
  • Unroll your pastry sheet and lay in front of you with the longest side facing you. You can leave it on the greaseproof paper packaging to aid rolling.
  • Spread the cranberry sauce over the pastry sheet, up to the edges, leaving a 1cm gap along the longer top edge.
  • Sprinkle the bacon pieces evenly over the cranberry sauce, and then tear the brie into small chunks and dot over the bacon.
  • Use the pastry brush to moisten the 1cm gap with milk. Taking the closest, long edge to you, begin to roll up. Keep rolling until you have a ‘Swiss roll’ shape. With the seam-side down, cut into 16 equal shaped, spiral slices.
  • Arrange the slices onto the lined baking sheet, leave a small gap between each to allow them to puff up.
  • Brush the tops with a little milk then place in the middle of the oven for 15-20 minutes, until risen, crisp and golden brown. Serve.

Ingredients

  • 200 g self-raising flour
  • 1 tsp baking powder
  • 100 g dried cranberries
  • 3 tbsp granulated sweetener or sugar
  • 1 tsp ground mixed spice
  • 1 medium egg
  • 75 g reduced-fat spread melted
  • juice of 1 large orange
  • zest of 1 orange finely grated
  • 125 g fat-free Greek yoghurt
  • ½ tsp mixed spice
  • 1 tsp granulated sweetener

Instructions

  • Preheat the oven to 180°C fan. Line a 12-hole muffin tray with cupcake cases.
  • Mix the flour, baking powder, cranberries, sweetener, and mixed spice together in a large bowl.
  • Beat the egg, melted spread, orange juice, orange zest and yoghurt together in a separate bowl.
  • Make a well in the centre of the dry ingredients, and pour in the liquid. Mix lightly until combined. Don't over mix or your muffins will be tough.
  • Spoon the mixture equally, between the cupcake cases.
  • Mix the mixed spice and granulated sweetener together and sprinkle over the top of the muffins.
  • Pop in the oven and bake for 15 minutes, until the muffins are risen and springy, and a skewer inserted into the middle comes out clean.
  • Allow to cool, then serve. These will keep for 3-4 days in an airtight tin.

Tip: Reusable, silicone cupcake cases are the best to use here, as they are guaranteed not to stick.

Ingredients

  • 4 reduced-fat pork sausages approx. 228g
  • fresh sage finely chopped
  • 8 g dried cranberries finely chopped
  • ½ tsp garlic granules
  • ½ tsp onion granules
  • ¼ tsp dried thyme
  • 6 chicken thighs, skinless and boneless approx. 600g
  • 6 bacon medallions
  • 2 tbsp cranberry sauce

Instructions

  • Preheat the oven to 180°C and line a baking tray with non-stick baking parchment.
  • Squeeze the sausage meat into a mixing bowl, discarding the casings. Add the sage, cranberries, garlic granules, onion granules and thyme. Mix together (we find it's easier to use your hands so that you can get everything evenly mixed).
  • Lay the chicken thighs out flat and spread with an even layer of the sausage mixture. Roll up each chicken thigh tightly, and then secure with a cocktail stick or skewer to seal in the filling.
  • Place each rolled chicken thigh onto the lined baking tray and, using half the cranberry sauce, brush the top of each. Lay a bacon medallion on top of each chicken thigh.
  • Place into the oven for 30 minutes. Remove from the oven and brush the remaining cranberry sauce on top of each slice of bacon. Return to the oven for a further 5-10 minutes, until the chicken and sausage are cooked through and the outside is turning golden brown. Remove the cocktail stick before serving.

Ingredients

  • 350 g potato peeled and diced
  • 1 medium carrot peeled and diced
  • 50 g broccoli cut into florets
  • 80 g Brussels sprouts sliced in half
  • 20 g dried cranberries
  • 20 g panko breadcrumbs
  • 15 g Parmesan cheese finely grated
  • ½ tsp garlic granules
  • ½ tsp onion granules
  • ¼ tsp mustard powder
  • salt and pepper to taste

For the coating

  • 50 g panko breadcrumbs
  • 1 medium egg beaten
  • low-calorie cooking spray

Instructions

  • Add the potato, carrot, broccoli and sprouts to a saucepan. Cover with cold water and set on a medium heat, bring to the boil then lower the heat and simmer for 8-10 minutes until the vegetables are soft and mashable.
  • Drain well and add to a bowl. Using a potato masher, mash the vegetables into a chunky mash. The vegetables should still be chunky and not too smooth. Add the cranberries, panko, Parmesan, garlic and onion granules and mustard powder. Mix well and season with salt and pepper to taste. Leave to cool.
  • Preheat the oven to 190°C and line a baking tray with non-stick baking paper.
  • When the mixture has cooled enough to handle, form into 18 small croquette shapes. Add the beaten egg to a bowl and the breadcrumbs to a second bowl. Dip each croquette into the egg then into the breadcrumbs, making sure to coat on all sides. Place onto the lined baking tray and repeat with the other croquettes.
  • Spray with low-calorie cooking spray and pop into the oven for 20-25 minutes, turning halfway through until golden brown. Serve 3 croquettes per person with a side of cranberry sauce or glug of gravy.
