Equipment

  • 28cm x 20cm ovenproof baking dish

Ingredients

  • 40 g dried cranberries
  • 1 orange, zest and juice
  • 150 g self-raising flour
  • 50 g oats
  • 65 g white granulated sweetener
  • 75 g reduced-fat spread
  • ¼ tsp ground cinnamon
  • 3 Bramley apples
  • 2 pears

Instructions

  • Preheat the oven to 160°C.
  • In a small bowl combine the dried cranberries with the orange juice and leave to one side while you prepare the rest of the crumble.
  • Reserve 1 tbsp of sweetener and add the rest to a mixing bowl with the flour and oats. Add the reduced-fat spread and rub into the flour between your fingertips until it looks like breadcrumbs.
  • Peel the apples and remove the core. Cut into slices about the width of a £1 coin. Do the same with the pears. Add to an ovenproof dish. Pour in the orange juice and cranberries and sprinkle over the orange zest, reserved sweetener and cinnamon. Stir and spread out evenly in the dish.
  • Top the fruit with the crumble mixture and roughly flatten out the surface. Pop into the oven for 35-40 minutes until the fruit is soft and the crumble has turned golden brown.

You can’t go wrong when you put pork and apple together! For this crowd-pleasing pulled pork recipe, we’ve poured a mixture of cider and apple juice over a spice-rubbed pork shoulder joint, then left the slow cooker to work its magic. It’s all about minimum effort and maximum flavour with this one! Once the pork is fall-off-the-fork tender, it’s ready to be shredded and coated in the gorgeous sauce made from the cooking juices. There are almost too many ways to enjoy the finished result – try pulled pork sliders, use it as a baked potato topping or spoon it over rice.

You’ve never made meatloaf as simple as this! It comes ready-portioned into impressive-looking mini meatloaves, with a gorgeous golden side of roast potatoes and crunchy green beans. Juicy apples and pork make for a heavenly combination, which is why we’ve added an infusion of grated apple, and a garnish of slices on top of each loaf. The tangy mustard glaze takes this roasted spread to the next level, so you’ll be left with a hearty family meal, and next to no washing-up to think about afterwards.

Hints & Tips

Below we added some of our communities most common hints and tips. We hope you find them useful.

NEW TIP
I will probably add a little more sage to both the meatloaf mix and the potatoes next time
Easy to increase quantity
We are a family of 5 with 3 adults and 2 hungry teens so I increased the amount of potatoes and green beans but managed to keep the meat element the same and just divided into 5 meatloaves. The meat element was still plenty and kept it in budget

You’ve not experienced true convenience until you’ve made a curry in a casserole dish! This Fruity Chicken Curry cuts down on faff and turns up the flavour, with mango, pineapple and apple: the blend of natural, fruity sweetness and medium-hot spices makes this a crowd-pleaser that everyone will want to try. To get things nice and creamy while keeping the calories low, we’ve swapped coconut milk for a plant-based coconut drink, and it works like a charm! The lime juice adds an invigorating, citrusy lift.
