Slow Cooker Mulled Wine Beef Stew | Slimming & Weight Watchers Friendly

  • 3.5 litre slow cooker

Ingredients

  • 500 g diced lean beef
  • low-calorie cooking spray
  • 1 medium onion, peeled and sliced
  • 1 medium carrot, peeled and sliced
  • 2 celery sticks, sliced
  • 3 garlic cloves, peeled and crushed
  • 300 ml boiling water
  • 1 red wine stock pot
  • 2 tbsp tomato puree
  • 1 tbsp cornflour
  • 2 tbsp cranberry sauce
  • 1 tbsp Henderson's relish
  • 1 tbsp white granulated sweetener
  • 200 g chopped tomatoes
  • 1 orange, sliced in half
  • 6 cloves
  • 1 cinnamon stick
  • 1 star anise
  • few sprigs of fresh thyme
  • few sprigs of fresh rosemary
  • salt and pepper, to taste

Instructions

  • Season the beef with salt and pepper. Spray a frying pan with low-calorie cooking spray and set on a medium heat. Add the beef and fry for 6-8 minutes until browned on all sides.
  • Add the beef to the slow cooker pot along with the onion, carrot, celery and garlic.
  • To the boiling water add the stock pot, tomato puree, cornflour, cranberry sauce, Henderson's relish and sweetener. Stir to combine and pour into the pot along with the chopped tomatoes and stir.
  • Press the cloves into the surface of the orange and nestle between the beef and veg. Add the cinnamon stick, star anise, thyme and rosemary.
  • Cover with a lid and cook on low for 4 hours until the beef is tender, vegetables cooked and sauce reduced. Remove the orange, cinnamon and star anise and discard. Season to taste with salt and pepper and serve with mashed potatoes or your choice of accompaniment.

Tip 1: Pressing the cloves into the skin of the orange makes it easier to remove once the stew has cooked.

  • 1.2 litre pudding basin

Ingredients

  • 90 g mincemeat
  • 125 g self-raising flour
  • 125 g reduced-fat spread
  • 60 g white granulated sweetener
  • 60 g caster sugar
  • 2 eggs
  • 1 tsp baking powder
  • ½ orange, zest and juice

Instructions

  • Grease a 1.2L pudding basin with reduced-fat spread. Cut a circle of non-stick baking paper to fit into the bottom of the dish. Spoon the mincemeat on top and roughly spread out.
  • To a mixing bowl add the flour, spread, sweetener, caster sugar, eggs and baking powder. Whisk with an electric whisk for 2 minutes until light and creamy.
  • Add the orange zest and juice and mix by hand into the cake mixture. Scrape the cake mixture into the bowl on top of the mincemeat layer.
  • Cut a 28cm circle of non-stick baking paper and tear off a section of foil slightly bigger than the circle. Layer the paper then foil and wrap the top of the dish tightly with paper on the inside.
  • Place the pudding basin into the slow cooker pot. Pour boiling water into the slow cooker pot, to about halfway up the sides of the pudding basin.
  • Cook for 2.5 – 3 hours until a knife inserted comes out clean. Remove the basin from the slow cooker. Loosen round the edge of the basin with a knife and place a plate on top, flip over onto a serving plate, slice and serve.

Amazing and really versatile
So tasty and easy to vary according to what you have and like. We're not keen on tomatoes so left them out, added bacon and thought we might include peas or broccoli next time too
Winter warmer
Such a simple dish to make and only one pot to wash! I used Chipotle flakes as that's all I had in but it gave such a warm depth to this dinner. The chicken was so tender being slow cooked. Very filling considering the simple ingredients.
