Lemonade Chicken Skewers | Slimming & Weight Watchers Friendly

These Lemonade Chicken Skewers are exactly what your summertime menu needs! Equipment

  • bamboo skewers

Ingredients

  • 1 kg chicken breast cut into 2½ cm (1 inch chunks)
  • 3 tbsp soy sauce
  • 1 tbsp Henderson's relish or Worcestershire Sauce
  • 1 tbsp lemon juice or lime juice
  • 100 ml sugar-free lemon lime pop like 7up Free or Sprite Zero
  • 4 garlic cloves peeled and minced
  • 3 tbsp tomato purée
  • 2 tsp granulated sweetener
  • ½ tsp ground ginger

Instructions

  • If using bamboo skewers, pop them in some water to soak.
  • Add all the ingredients to a large bowl and mix well so that the chicken is well coated. Cover the bowl and place in the fridge to marinate for 4-6 hours (or overnight is even better!).
  • Once the chicken is ready, thread it onto the skewers. We find using 8 skewers works well, so you have 2 skewers per person – you can do more small skewers if you prefer.
  • Place onto a hot barbecue for around 25-30 minutes, until the chicken has cooked through.
    If you want to cook these in the oven, place onto a foil lined baking tray. Place into an oven preheated to 180°C for 30 minutes, until cooked through.
  • Once cooked, serve with your choice of accompaniment.

Pesto Pasta Salad | Slimming & Weight Watchers Friendly

You’ll look forward to lunch all day when you’ve packed a portion of this easy Pesto Pasta Salad. Instead of using a shop-bought pesto that’s made with oil, we’ve blitzed together avocado, basil, garlic and Parmesan to create a rich, creamy dressing. Our simple salad mixes up gooey mozzarella, crunchy pine nuts and cherry tomatoes (roasted for extra sweetness!). It’s spot on for picnics, BBQs and lunch boxes!

Ingredients

  • 250 g cherry tomatoes halved
  • low-calorie cooking spray
  • salt and freshly ground black pepper
  • 200 g small, dried pasta shapes (we used fusilli)
  • 125 g mozzarella cut into 1cm cubes
  • 25 g pine nuts
  • 25 g rocket leaves

For the pesto dressing

  • 1 small avocado stoned and peeled
  • 30 g fresh basil
  • 2 garlic cloves peeled
  • juice of 1 lemon
  • 25 g Parmesan cheese finely grated
  • 2-3 tbsp water
  • salt and freshly ground black pepper

Instructions

  • Preheat the oven to 200°C fan. Scatter the cherry tomatoes on a baking tray and spray with low-calorie cooking spray. Season with salt and freshly ground black pepper, and roast for around 15 minutes.
  • While the tomatoes roast, cook the pasta according to packet instructions (usually around 10-12 minutes in a pan of boiling water). When cooked, drain and rinse under cold running water to cool quickly. Drain thoroughly.
  • Make the dressing by placing all the ingredients, except the water and salt and pepper into a blender or mini chopper. Blitz to a smooth dressing. Use a little water to thin down if needed. It should be the consistency of thick cream. Season to taste with salt and pepper.
  • Place the drained pasta, cherry tomatoes, mozzarella, pine nuts and rocket in a mixing bowl. Add the dressing and gently toss together until well combined. Serve.

Ingredients

  • 350 g diced pork, any visible fat removed
  • 30 g Parmesan cheese, finely grated
  • 1 tsp mixed herbs
  • 1 tsp Dijon mustard
  • 1 tsp red wine vinegar
  • ¼ tsp garlic granules
  • salt and pepper, to taste
  • low-calorie cooking spray

Instructions

  • Preheat the oven to 190ºC and spray a baking tray with a little low-calorie cooking spray.
  • In a bowl, combine the mixed herbs, Dijon mustard, red wine vinegar, garlic granules and a little salt and pepper. Add the pork to the bowl and toss to coat.
  • Thread the diced pork onto 4 skewers and place onto the baking tray. Sprinkle over half the Parmesan and use the pork on the skewers to dab onto any of the excess Parmesan on the tray.
  • Pop into the oven for 10 minutes. Remove from the oven and sprinkle over the remaining Parmesan cheese, again dabbing the skewers into any of the excess Parmesan on the tray. Cook for another 5 minutes.
  • Remove from the oven and serve with your choice of accompaniment.

Tip: If you are using bamboo skewers, be sure to soak in water before cooking to stop them from burning.

Ingredients

For the marinade

  • 2 chicken breasts
  • 1 garlic clove, peeled and crushed
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 tbsp sweet chilli sauce
  • 1 tbsp honey
  • 1 red chilli, seeds removed and finely diced
  • 2 g fresh coriander, finely chopped

To serve

  • 4 bread rolls, sliced in half
  • 60 g cucumber, cut into ribbons with a potato peeler
  • 40 g lettuce, roughly chopped
  • 1 tomato, sliced
  • 4 tbsp light mayo
  • 2 tbsp sweet chilli sauce

Instructions

  • Place a chicken breast on a chopping board and slice into one side of the breast, cutting horizontally to create two thinner pieces of chicken. Cut each thinner section into half and repeat with the other chicken breast.
  • In a small bowl mix the marinade ingredients together and pour over the chicken. Stir to coat, cover the dish and put in the fridge for an hour.
  • When the chicken has marinated, spray a frying pan or griddle pan with low-calorie cooking spray and set on a medium heat.
  • Add the chicken and cook for 4 minutes on each side until the chicken is cooked through, no pinkness remains and the juices run clear. Discard any leftover marinade.
  • While the chicken is cooking, mix the mayo with 1 tbsp sweet chilli sauce and spread onto the bottom half of the bread rolls. Drizzle the top of the rolls with the remaining 1 tbsp sweet chilli sauce.
  • When the chicken is cooked, place 2 pieces on the bottom half of each of the rolls. Top with cucumber ribbons, lettuce and tomato and serve with your choice of accompaniment.

Black and Blue Burgers - Pinch of Nom Slimming Recipes

Black and Blue Burger | Slimming & Weight Watchers Friendly

This is one of our favourite burger recipes! With blackened Cajun spices and a cooling blue cheese dressing, these tasty burgers are perfect for a slimming friendly barbecue.

  • frying pan or griddle pan
  • small bowl

  • burger press (useful but not essential)

Ingredients

For the patties

  • 500 g 5% fat minced beef
  • 1 small onion, peeled and finely chopped
  • 1 small pepper, any colour, approx. 100g deseeded and finely chopped
  • 20 g panko breadcrumbs
  • 1 medium egg, beaten
  • salt and black pepper, to taste
  • low calorie cooking spray

For the spice mix

  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp chilli powder
  • 1 tsp garlic granules

For the dressing

  • 75 g fat free Greek yoghurt
  • 50 g blue cheese, crumbled

To serve

  • 6 wholemeal bread rolls
  • 2 tomatoes, sliced
  • 1 medium red onion, peeled and sliced
  • 1/2 iceberg lettuce, shredded

Instructions

  • Spray a large frying pan with low calorie cooking spray and place over a medium heat. Sauté the onions and peppers for 5 minutes until softened. Place in a large mixing bowl and allow to cool.
  • Combine all of the spice mix ingredients together in a small bowl and set aside.
  • Prepare the blue cheese dressing by lightly mashing the cheese and the yoghurt together with a fork, mixing well, but keeping a chunky texture.
  • When the peppers and onions are cool, add the mince, panko breadcrumbs and half the spice mix. Add the egg and mix together throughly. At this stage, you can cook a small penny sized piece in a hot frying pan and taste. Adjust the seasoning by adding salt and black pepper to taste. Form the mixture into 6 burgers. Cover and refrigerate for 20 minutes to firm up.
  • When ready to cook, spray the burgers liberally on both sides with low calorie cooking spray and then rub in the remaining spice mix.
  • Place the frying pan on a medium to high heat and add the burgers. Cook for 4-5 minutes each side. The spice coating should blacken, but not burn. You may need to do this in 2 batches.
  • Split the rolls in half and fill with the lettuce, tomato and onion. Place a burger on top and then dollop a spoonful of the blue cheese dressing on top. Enjoy!

Notes

Tip: We used smoked paprika (also known as smoked sweet paprika). This has a mild spice rating. You can also use hot smoked paprika. This has a more fiery kick to it and you should only use this if you like your spices hot!
Tip: We used Stilton cheese, but you can use any blue cheese you prefer.
