Lemonade Chicken Skewers | Slimming & Weight Watchers Friendly

These Lemonade Chicken Skewers are exactly what your summertime menu needs! The ultimate low-calorie BBQ hack, we’ve combined fizzy pop with a short list of store cupboard staples to make the mouthwatering marinade. They’ll look right at home with your favourite grilled side dishes and a good dollop of our tangy Banana Ketchup!

Equipment

  • bamboo skewers

Ingredients

  • 1 kg chicken breast cut into 2½ cm (1 inch chunks)
  • 3 tbsp soy sauce
  • 1 tbsp Henderson's relish or Worcestershire Sauce
  • 1 tbsp lemon juice or lime juice
  • 100 ml sugar-free lemon lime pop like 7up Free or Sprite Zero
  • 4 garlic cloves peeled and minced
  • 3 tbsp tomato purée
  • 2 tsp granulated sweetener
  • ½ tsp ground ginger

Instructions

  • If using bamboo skewers, pop them in some water to soak.
  • Add all the ingredients to a large bowl and mix well so that the chicken is well coated. Cover the bowl and place in the fridge to marinate for 4-6 hours (or overnight is even better!).
  • Once the chicken is ready, thread it onto the skewers. We find using 8 skewers works well, so you have 2 skewers per person – you can do more small skewers if you prefer.
  • Place onto a hot barbecue for around 25-30 minutes, until the chicken has cooked through.
    If you want to cook these in the oven, place onto a foil lined baking tray. Place into an oven preheated to 180°C for 30 minutes, until cooked through.
  • Once cooked, serve with your choice of accompaniment.

Ingredients

  • ½ red onion peeled and finely sliced
  • 50 ml pickle vinegar from the jar
  • 500 g new potatoes sliced in half
  • 100 g fat-free Greek yoghurt
  • 60 g light mayonnaise
  • ½ tsp Dijon mustard
  • 60 g gherkins diced
  • salt and freshly ground black pepper to taste
  • 1 tbsp fresh chives finely sliced

Instructions

  • Place the red onion in a small bowl and cover with the vinegar. Set aside while the potatoes cook.
  • Place the potatoes into a pan of cold salted water. Bring to the boil then lower the heat and simmer for 15 minutes until tender. Drain well and leave to cool.
  • In a bowl, combine the yoghurt, mayonnaise, mustard and mix well.
  • Pour 30ml of the vinegar into the yoghurt mixture and mix well.
  • Discard the remaining vinegar and add the red onion to the yoghurt mixture along with the gherkins.
  • Once cooled, add the potatoes to the yoghurt mixture and stir to coat.
  • Season to taste with salt and pepper and sprinkle over the chives.

Ingredients

  • 750 g smoked gammon joint, netting or plastic film and all visible fat removed
  • 2 medium onions, peeled and chopped
  • 3 garlic cloves, peeled and crushed
  • 1 medium red pepper, deseeded and cut into 3cm chunks
  • 1 medium green pepper, deseeded and cut into 3cm chunks
  • 2 large carrots, peeled and cut into small dice
  • 100 g white mushrooms, thickly sliced
  • 390 g tin baked beans in barbecue sauce
  • 400 g tin chopped tomatoes
  • 3 tbsp BBQ seasoning
  • 1 tbsp sweet smoked paprika
  • 2 tbsp tomato puree
  • 2 tbsp Worcestershire sauce or Henderson's relish
  • 1 low-salt beef stock cube, crumbled
  • 1 tbsp balsamic vinegar
  • 1 tsp mustard powder
  • 1 tbsp clear honey

Instructions

  • You may need to soak the gammon joint overnight in cold water to remove any excess saltiness. To decide if this is necessary, cut a small piece of gammon from the joint and fry it until thoroughly cooked and then taste. If you think it tastes too salty, place the gammon joint in a bowl of cold water, cover and place in the fridge overnight. Discard the soaking water and rinse the joint in fresh cold water.
  • Place all the ingredients, including the gammon joint, into the slow cooker, stir to combine and cover with the lid. Cook on high for 6-8 hours.
  • The stew will be ready when the gammon is tender, falls apart and the sauce has thickened. Use two forks to shred the gammon and mix in. If the stew is not thick enough, remove the lid and continue to cook for a little longer. Serve.

Ingredients

For the marinade

  • 50 g fat-free natural yoghurt
  • 2 cm piece root ginger, peeled and finely grated
  • 3 cloves of garlic, peeled and crushed
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • ½ tsp mild chilli powder
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • juice of ½ lemon
  • low-calorie cooking spray

For the kebabs

  • 600 g lamb leg steaks, all visible fat removed and cut into 3cm pieces
  • 1 green pepper, deseeded and cut into 3cm pieces
  • 1 red pepper, deseeded and cut into 3cm pieces
  • 2 medium onions, peeled and cut into eighths
  • 16 cherry tomatoes, stalks removed

Instructions

  • Place all the marinade ingredients in a medium bowl and stir to combine. Add the lamb and mix well to coat all over. Cover and place in the fridge to marinate for about 1 hour.
  • Line a large baking tray with kitchen foil and spray with low-calorie cooking spray. Place 8 skewers in a shallow dish of water and leave to soak for about 20 minutes. This will prevent them from burning in the oven. Preheat the oven to 220°C.
  • Remove the skewers from the water and thread the marinated lamb, peppers, onion and tomatoes onto the skewers to make 8 evenly-sized kebabs.
  • Place the kebabs on a large baking tray, spray the tops with low-calorie cooking spray and place in the preheated oven. Bake for about 25 minutes, turning halfway through, until the lamb is cooked, and the vegetables have softened.
  • Serve at once with basmati rice and a dollop of yoghurt, or remove from the skewers and fold inside a tortilla wrap with some yoghurt.

If you are using bamboo skewers, be sure to soak them in water before cooking to stop them from burning. If your air fryer doesn't have a preheat function, we suggest heating at cooking temperature for a few minutes before adding your food.

Easy and delicious
Came out perfect in the air fryer so was a really quick meal to cook. Left out the sirracha sauce from the marinade as we're not too keen on it but it was still delicious and didn't feel like anything was missing. Perfect with a nice flatbread.
