Frozen Pickle Martini | Slimming & Weight Watchers Friendly

Not shaken or stirred…this martini is blitzed into a refreshing, grown-up slushie! With the classic martini base of gin and dry vermouth (swap the gin for vodka if you prefer), the tangy hit of pickle juice adds a subtle sweetness and zing.

  • 3 tbsp gin
  • 1 tbsp dry vermouth

Instructions

  • Place the gin, vermouth, pickle juice and ice into a high speed blender and blitz for a few seconds, until the ice is crushed.
  • Pour into a martini glass, and garnish with the baby gherkins.

Ingredients

  • 120 g blueberries
  • 100 ml white rum
  • 600 ml diet lemonade
  • 3 limes juiced
  • 15 g fresh mint leaves removed from stalks
  • 1 tbsp white granulated sweetener
  • 1 lime thinly sliced
  • ice to serve
  • extra mint leaves to serve

Instructions

  • Add 100g blueberries to a jug along with the lime juice, sweetener and mint leaves. Crush the blueberries slightly to help release more of their juices, and gently press the mint leaves to ‘bruise’ them – this will enhance the minty flavours too.
  • Pour in the rum and lemonade and stir together.
  • Add ice to the serving glasses and pour over the mojito mixture. Add the extra lime slices to the glasses along with the rest of the blueberries and a few extra mint leaves. Serve.

  • handful of ice cubes
  • 1 sprig of mint leaves only
  • 1 satsuma thinly sliced

Instructions

  • Add the ice cubes to your glass.
  • Roll the mint leaves in your palm and add to the glass.
  • Add the fruit and Pimms to the glass.
  • Top up with ginger ale and stir before serving.

Tip: Use ginger ale not ginger beer. The flavour of ginger ale is much subtler and creates a better balance of flavours.

  • small non-stick saucepan
  • heatproof measuring jug
  • Nylon sieve
  • food processor or stick blender
  • 4 drinking glasses (approx. 300ml each)

Ingredients

  • 3 large lemons
  • 4-5 tbsp white granulated sweetener or sugar to taste
  • 100 g raspberries stalks removed
  • 1 L cold water

To decorate (optional)

  • 4 raspberries
  • 4 small mint sprigs
  • ice to serve

Instructions

  • Cut thin slices of lemon peel from the whole of each lemon using a vegetable peeler or small sharp knife. You only need the yellow part, not the white pith, as this will make the lemonade bitter.
  • Place the lemon peel in a small non-stick saucepan, and pour in 200ml of the cold water to cover the lemon peel. Place on a low heat and gently simmer, uncovered, for about 10 minutes to infuse the water with the flavour and colour of the lemon peel.
  • Remove from the heat and strain through a nylon sieve into a heatproof measuring jug, discarding the lemon peel. Stir in the granulated sweetener or sugar, until completely dissolved. Leave the lemon syrup to cool.
  • Squeeze the juice from the peeled lemons and strain through a nylon sieve into the cooled lemon syrup in the measuring jug.
  • Blitz the raspberries in a food processor or using a stick blender until smooth. Push the puree through a nylon sieve using a wooden spoon, into the lemon liquid in the jug, scraping the raspberry puree off the underside of the sieve. Discard the raspberry seeds remaining in the sieve.
  • Stir the raspberry puree into the lemon liquid and top up with the remaining cold water, stirring until completely mixed. Chill if wished and serve in drinking glasses with ice, a raspberry and a small mint sprig (optional).

Notes

Tip: Use a small non-stick saucepan. Avoid using aluminium, unlined copper or tin saucepans as these may react with the acid in the lemon juice and give the lemonade a metallic taste. Use a nylon sieve instead of a metal one; metal can react with the acid in the lemon juice.
Tip: Cut the lemon peel as thinly as possible to avoid getting the white pith in the mixture, as this will make the lemonade bitter. You could use sparkling water instead of still water, if you prefer.
Tip: Use granulated sweetener that has the same texture, weight and sweetness as sugar. You may need to adjust the amount of sweetener or sugar to suit your own taste.
Tip: We’ve included an optional garnish of mint and raspberries, this will add an additional 2 kcal per portion.

  • Small saucepan
  • Sieve

Ingredients

For the hot chocolate

  • 400 ml skimmed milk
  • 1 tbsp cocoa powder
  • 4-5 tsp white granulated sweetener, to taste
  • 1 cinnamon stick
  • 10 cloves
  • 1 tsp orange zest
  • 1 tsp vanilla essence
  • ½ tsp ground ginger

For the topping

  • 30 g mini marshmallows
  • ½ tsp red and green sugar sprinkles
  • 2 swirls of reduced-fat aerosol cream

Instructions

  • Add all the hot chocolate ingredients to a small saucepan and mix.
  • Set the pan on a very low heat and heat for 10 minutes, whisking throughout. The milk should be steaming and just starting to bubble.
  • Strain the milk into your mugs and discard the cloves and cinnamon stick.
  • Add a swirl of aerosol cream and sprinkle over the marshmallows and sugar sprinkles. Serve!
