Creamy Red Pesto Chicken | Slimming & Weight Watchers Friendly

If you’re a fan of green pesto, you’ll love this Creamy Red Pesto Chicken dish. The traditional sauce's red counterpart is packed with the same herby and nutty flavours, but its red pepper and tomato base adds a natural sweetness that makes it a hit with the whole family!

Ingredients

  • 4 medium, skinless chicken breasts (approx. 130g each)
  • 2 medium onions , peeled and thinly sliced
  • 2 garlic cloves , peeled and crushed
  • 200 g button mushrooms , thinly sliced
  • 1 chicken stock cube (made up with 400ml boiling water)
  • 6 tbsp ready-made red pesto
  • 180 g reduced-fat cream cheese
  • 40 g baby spinach leaves
  • salt and black pepper , to taste
  • low-calorie cooking spray

Instructions

  • Spray a large frying pan with low-calorie cooking spray and place on a medium heat. Add the onion and garlic, then fry gently for 5 minutes until softened a little.
  • Add the mushrooms and cook for 8-10 minutes until the onions and mushrooms are caramelised and lightly golden.
  • Add the chicken breasts, and cook for 2-3 minutes on each side – until lightly browned. Then pour in the chicken stock, and simmer over a medium heat for 10 minutes. Turn the chicken over and partially cover your pan with the lid. Simmer for a further 10 minutes – or until the chicken is cooked through. You'll know the chicken is fully cooked when it shows no sign of pinkness, and the juices run clear.
  • Stir in the red pesto until completely mixed. Remove from the heat, then stir in the reduced fat cream cheese – until completely blended.
  • If the sauce is too thin, keep simmering, uncovered – until it's reduced to your liking. If the sauce is too thick, add a splash of water to your pan, then stir.
  • Stir in the spinach leaves until slightly wilted, then season to taste with salt and black pepper. Serve with a small portion of basmati rice, or another accompaniment of your choice.

Notes

Tip 1: For this recipe, we recommend using a reduced-fat cream cheese rather than a fat-free cream cheese, as it'll make a richer, creamy sauce.
Tip 2: Make sure the spinach leaves are well-dried before adding them to the sauce. If there's excess moisture on the spinach leaves after washing, it may thin the sauce.
Tip 3: Feel free to use ready-made red pesto from a jar, or a ready-made chilled version.

Creamy Chicken Enchiladas | Slimming & Weight Watchers Friendly

We always look forward to dinner when Creamy Chicken Enchiladas are on the menu! There’s no shortage of flavour in our slimming-friendly filling, thanks to a mildly-spiced combination of passata, veggies and beans. It’s all bundled into oven-baked mini tortilla wraps for an utterly irresistible crunch, and then topped with a bubbling layer of reduced-fat Cheddar cheese for good measure.

Ingredients

  • 300 g diced chicken breast
  • 2 medium peppers deseeded and diced
  • 120 g canned black beans drained and rinsed
  • 2 garlic cloves peeled and crushed
  • 200 g passata
  • 200 g reduced-fat cream cheese
  • 1 tbsp tomato purée
  • 1 tsp mild chilli powder
  • 1 tsp ground cumin
  • 1 tsp sweet smoked paprika
  • 1 tsp onion granules
  • 1 tsp garlic granules
  • 8 mini tortilla wraps approx. 30g per wrap
  • 20 g reduced-fat Cheddar cheese finely grated
  • low-calorie cooking spray
  • salt and pepper to taste

Instructions

  • Spray a frying pan with low-calorie cooking spray and set on a medium heat. Add the peppers and garlic and cook for 4 minutes.
  • Add the diced chicken and brown on all sides. This should take 4-5 minutes. Add the chilli powder, cumin, paprika, garlic granules and onion granules. Stir to coat and cook for a further 2 minutes.
  • Preheat the oven to 180°C.
  • Add the black beans, tomato purée and half of the passata and bring the pan to a gentle simmer. Add the cream cheese and stir until combined, then season with salt and pepper.
  • Microwave the tortilla wraps for 30 seconds, this will make them easier to roll. Spoon the enchilada mixture down the middle of each tortilla wrap. Roll the wrap over the filling to encase the filling.
  • Place the enchiladas into an ovenproof dish. Pour over the remaining passata and sprinkle with cheese.
  • Pop into the oven for 10 minutes until the cheese is bubbly, melted and golden. Serve with your choice of accompaniment.

Tip: We've used mild chilli powder, but if you'd like them with more of a kick, add a little extra or use hot chilli powder.

  • 400 g chicken, diced
  • 1 onion, thinly sliced
  • 175 g reduced-fat cream cheese

Instructions

  • Spray a frying pan with low-calorie cooking spray. Cook the chicken until almost brown, then remove from the pan and set aside.

  • Add 100ml water to the pan and simmer until the liquid has reduced by half. Lower the heat and stir in the cream cheese.
  • Return the chicken to the pan and simmer for 5-10 minutes, until the chicken is cooked thoroughly.
  • Sprinkle with the chives, if using. Serve and enjoy!

Ingredients

  • 4 medium skinless chicken breasts, approx. 130g each
  • 2 medium onions, peeled and thinly sliced
  • 2 garlic cloves, peeled and crushed
  • 200 g button mushrooms, thinly sliced

  • 60 g Parmesan, finely grated
  • 80 g tinned sweetcorn, well drained
  • 6 spring onions, trimmed and sliced
  • salt and black pepper, to taste
  • low-calorie cooking spray

Instructions

  • Spray a large frying pan with low-calorie cooking spray and place over a medium heat. Add the onion and garlic and fry gently for 5 minutes, until softened a little.
  • Add the mushrooms and cook for 8-10 minutes, until the onion and mushrooms have softened and are lightly golden.
  • Add the chicken breasts and cook for 2-3 minutes on each side to lightly brown. Pour in the chicken stock and simmer over a medium heat for 10 minutes. Turn the chicken over and partially cover with a lid. Simmer for a further 10 minutes, or until the chicken is cooked, shows no sign of pinkness and the juices run clear.
  • Remove from the heat and stir in the cream cheese until completely blended. If the sauce is too thin, keep simmering, uncovered, to reduce to your liking. If the sauce is too thick, add a little water and stir in.
  • Return to the heat and stir in the Parmesan, sweetcorn and spring onion. Continue to simmer, uncovered, for 4-5 minutes, until the spring onion is tender. Season to taste with salt and black pepper if needed. Serve with a small portion of basmati rice or other accompaniment of choice.

Tip: We recommend using a reduced-fat cream cheese rather than a fat-free cream cheese in this recipe as it will make for a richer, creamier sauce. It will also reheat more successfully after freezing.
Tip: Make sure that the sweetcorn is well drained before adding it, otherwise it may thin the sauce.
Tip: If you prefer, you could use diced chicken thighs in this recipe.
